Treat yourself to something sweet without the harmful ingredients. 

There was a point in my wellness journey where cookies seemed forever off the table. With all the dietary restrictions I'd tried, from gluten-free to dairy-free, I had nearly given up on this classic treat. Determined not to let go of the cookie-baking traditions my sister and I shared with our grandmother, we crafted this healthier version
that's just as satisfying.


  • 1 cup Ghee
  • 1/2 cup Organic Coconut Sugar
  • 1/2 cup Organic Date Sugar
  • 1/2 t Organic Baking Soda
  • 1/2 t Redmond Real Salt
  • 1 t Vanilla
  • 2 Pasture Raised Eggs
  • 3/4-1 cup Coconut Flour
  • 3/4-1 cup Cassava Flour
  • 1 cup Hu Baking Gems 

    Combine ghee and sugars in a large bowl. Add in baking soda, salt, vanilla, and eggs and mix thoroughly. Once incorporated add in 3/4 cup of both flours. The amount of flour can depend on the temperature in your current location so you may need a bit more or less depending. Mix in baking gems and form small dough balls about 1.5 inches each. Place on a cookie sheet with a Silpat and lightly press to flatten each cookie ball. Cook on 350 for around 10 minutes. These should be watched a bit closely as cooking times can vary depending on location and weather. I love my cookies golden brown and a touch soft in the center.
